Learning to Cook at Thirty

Until last year, my idea of cooking was boiling water for instant noodles. I am thirty, I have a job I like and an apartment with a decent kitchen, but for years that kitchen was mostly a place to keep takeaway menus.

Things changed when my doctor told me, kindly but clearly, that I was eating too much salt and too few vegetables. I left her office feeling a little embarrassed. That weekend, I bought a basic cookbook and decided to learn one new recipe every week.

The first weeks were not pretty. I burned rice, I cut my finger while slicing an onion, and I once added a tablespoon of salt instead of a teaspoon. But I noticed that each mistake taught me something specific. Rice needs less heat than I thought. A sharp knife is actually safer than a dull one. And reading the whole recipe before starting saves a lot of trouble.

By the third month, I could make five or six simple dishes without looking at the book. I started inviting friends for dinner, which was nervous at first but quickly became the best part of my week. People who never called me suddenly asked when the next dinner was.

The biggest surprise was not the food. It was the calm I felt while cooking. For forty minutes, I was not checking my phone or thinking about work. I was just chopping, stirring and tasting. I still order takeaway sometimes, but now it is a choice, not the only option I have.
